Lemon Honey Chicken

Here is a fantastic recipe I got from a friend. I spiced it up some and made it super healthy.
Ingredients
  • 4 tbsp fresh lemon juice
  • 2 tbsp raw honey
  • 2 tbsp grape seed oil
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 3 cloves of garlic, minced
  • sea salt and pepper to taste
  • 2 chicken breasts
Instructions
  1. mix all in ingredients together and pour half in a baking pan
  2. place chicken breasts in the pan and poke with fork a few times. Pour the rest of the mixture over the chicken and let marinade for 1-2 hours.
  3. Cook chicken at 375 degrees F and cook for 20-30 minutes with an internal temperature of 160-180 degrees F or until the center is no longer pink.
  4. *Tip- pound chicken breasts. This will make the chicken cook evenly and will take less time to cook.

    This really looks good, Thanks Flavia! I have a recipe for healthy chocolate cookies. (I got it from beyond diet and made a few changes)

    In a large bowl, mix 2 cups of almond meal (ground almonds) with 1/2 cup of ground flax seed, 1/2 tsp sea salt, and 1/2 tsp baking soda. In a separate bowl mix 1/4 cup of melted butter (raw, grass fed if possible) 1/4 cup coconut oil, 3/4 cup coconut sugar, 1/2 cup cocoa, and 1 TBS vanilla. lightly stir wet into dry and then add 1 organic egg. Mix until thoroughly combined. Preheat the oven to 350 degrees F. Grease cookie sheet with coconut oil. Place dough by the TBS on well greased cookie sheet and bake for 10 minutes. The cookies will still be soft when you pull them out of the oven, but will harden up once they cool. Enjoy!
