Healthy Avocado Salad Recipe

Try this delicious healthy fat salad. Know one will believe you are dieting!
Ingredients
  • 2 oz organic chicken breast, cooked and sliced
  • 1 strip organic bacon, cut into pieces
  • 1 oz avocado, sliced
  • 1 cup lettuce (of your choice)
  • 6 cherry tomatoes, halved
  • 1 oz blue cheese
  • Dressing
  • ½ tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • ½ lemon
  • sea salt and pepper to taste
Instructions
  1. Place everything but the meat and dressing items in a bowl, one item at a time for presentation.
  2. Add oil, balsamic vinegar and squeeze lemon on top. Finish off with salt and pepper to taste.
  3. Place chicken and bacon on top and enjoy.
Notes
Grill chicken with chipotle spices. May use turkey bacon to decrease fat by 3g and 35 fewer calories.

    I’d cheer for joy for a kick-ass salad like this…lots of great flavour and texture without the overbearing dressing. Thanks for sharing this!

    I found a simple recipe for gluten free vegan cookies that everyone loves….like this salad, it’s not low fat but it’s got the protien, and the ingredients are pretty solid for such a tasty cookie:

    2 1/2 cups almond flour (aka ground almonds. don’t use bob mills brand).
    1/2 tsp salt
    1/2 tsp baking soda
    1/2 cup grapeseed oil (or half applesauce)
    1/2 cup agave nectar
    1 tbsp vanilla
    +Your fave jam (thumbprint it), or chocolate/flavour chips, or nuts to add to it.

    mix wet ingredients, mix dry ingredients, then combine, and bake at 350 F for 8 to 10 mins. Let cool for 10 minutes before moving to a rack.
    it’s a wet mixture, and the cookies come out pretty fragile, so handle with care when moving them to a rack to cool.

    Looks deee licious. Here is a recipe for LOW carb – high protein – candy treats – no sugar – but east to make and delicious

    > soak 2 T chia seeds in 6-8 T of water
    > after 5 minutes add:
    > 1/3-1/2 almond butter
    > 1-3 scoops protein powder – enough powder to make it not so sticky (my favorite taste wise is VITOL egg protein – low carb- sweetened with stevia)
    > 1 T cacao or cocoa powder
    > NOTE: if protein powder not sweet add a bit of stevia
    > roll into balls – good if rolled in unsweetened coconut
    > Optional: add walnut pieces or dried fruit currants or
    > cranberries
