One day I had a bunch of family make a ‘surprise visit’. I love the size of my family, and love those random stop by’s but this time I wasn’t prepared with anything to offer.. Having a newborn baby has been busy so I’ve been spending less time in the kitchen 🙁

I went into the kitchen and looked into my pantry.. I only had some basic ingredients since I was also lacking in the grocery department – ha. I decided to grab the oats, honey and peanut butter and see what happens. I mixed them all together and threw them in the freezer.. What came out was fantastic! The family loved them and I now make them on a regular basis.

My favourite part about this recipe is how flexible it is. I’ve thrown in carob chocolate chips, nuts, and pretty much anything that I think would be good in an oat bar. So feel free to add stuff to do to make it more unique!

Milia also seems to enjoy this! Just be careful with kids because of the peanut butter 🙂

No Bake Oat Bars

Ingredients
  1. 3 cups non-cooked oats (rolled, old-fashioned or quick cooking)
  2. 1/2 cup peanut butter
  3. 1/2 cup honey
Instructions
  1. Mix all ingredients together small pan and flatten evenly.
  2. Serve chilled in small squares (5 minutes in freezer, 1 hour in fridge).
Notes
  1. * melt peanut butter and honey for easier mixing (optional)
  2. * use 1 tsp vanilla for extra sweetness (optional)
  3. * throw in nuts, seeds, raisons, etc for extra flavouring (optional)
  4. * top with sea salt for a sweet and salty treat (optional)

      Looks good – what kind of oats? Old Fashioned, Quick Cooking, Steel Cut? and are they raw or cooked?

        Hey Laruel,

        I used old fashioned oats.. I did not cook them so quick cooking would do the exact same thing if you have those.

        I usually buy a big bag from Costco. I simple just scooped it out of the bag and used them raw 🙂

        It might be worth a mention that using ‘quick-cooking’ oats might make the recipe BETTER. Quick cooking oats are thinner making them cook faster. With that being said, something thinner might mix even better with the other ingredients 🙂

    Hi Flavia… quick question.. see I cannot have oats and although this is called “oat bars” was wondering if you thought using quinoa flakes in place of oats would work and if so should i use same amount cup for cup? Thanks really appreciate it… also could we sub honey(also cannot have ) for pure maple syrup? Thanks love your posts

      Hey Jen,

      I would give it a try with smaller portions to see if it works or not.. It seems another reader said the quinoa flakes didn’t stick together as well so maybe try more honey or peanut butter to make it stick together better 🙂

    Trying it – making 1/2 recipe with Cashew Butter, Quinoa Flakes, Raw Honey – added Vanilla, Chia Seeds and Raw Pumpkin seeds – in Freezer now

      They don’t stick together that well – I think I can roll in balls for storage – but they taste amazing 🙂

      Maybe the oats would stick together better – will get some and try it next time.

        Yes! I love this recipe cause it’s so versatile! Interesting that it didn’t stick together as well with quinoa flakes.. maybe more honey to make it stickier? 🙂

    they sound good howverev just found out i have a mild intolerance to peanut butter can almond butter be substituted and should it be in the same amonut and does it matter whether or not the oatmeal used is gluetin free or not?

      Almond butter would be a great substitution and you would use the same amount. 🙂 It doesn’t matter on the oats.

    I made this with organic peanut butter and raw honey, and I turned steel cut oats into flour in my food processor. I had to add a little more peanut butter and honey though since this was really dry. It’s wonderful as far as the taste but it’s crumbly.
