Here is a tasty treat that helps me satisfy my pumpkin craving even though it’s not fall yet ?

First, I mix all wet ingredients together…

Then I mix all dry ingredients together….

Add the wet mixture to the dry mixture and mix well…

Pour into a 9×9 baking dish (you can line with parchment paper or oil with coconut oil if desired) and bake at 350F for 20-25 minutes, or until edges are golden brown.

Ingredients
  1. 2 cups of oats
  2. 1/2 cup almonds, chopped
  3. 1/2 cup apricots or cranberries, chopped
  4. 1/2 cup mini carob chips
  5. 1/3 cup quinoa flour
  6. 1 tsp cinnamon
  7. 1/2 tsp Aztec sea salt
  8. 3/4 cup puree pumpkin
  9. 1/2 cup raw honey, melted
  10. 1/4 cup coconut oil, melted
  11. 2 tsp vanilla
Instructions
  1. Mix the dry & wet ingredients separate & then add them together. Bake at 350 for about 20-25 mins.

    It was delicious. Thank you for the great recipe.
    I didn’t have exact mixture so used oat flower and coconut flower for quinoa flower and both worked fine.
    Also used raisin and dates for Apricot, and pecan for Almond. I believe you can put any of your favorite dry fruit and the nuts.
