Who doesn’t love a pumpkin spice latte on a perfect fall day?

Anyway, I LOVE this recipe. It 100% satisfies my pumpkin cravings and is WAY healthier then the one you get from Starbucks or any other coffee shop.

Here’s the recipe for a warm, pumpkin-y drink 🙂

Healthy Pumpkin Spice Latte

Ingredients
  1. ¼ cup pumpkin puree
  2. 1 cup coconut milk
  3. ½ teaspoon cinnamon
  4. ⅛ teaspoon mace or nutmeg*
  5. 1 tablespoon coconut oil
  6. 1 tablespoon pure maple syrup
  7. (Adjust up or down to desired sweetness)
  8. ½ teaspoon pure vanilla extract
Instructions
  1. Combine all ingredients with the exception of the coconut oil in a medium-sized saucepan and place over medium heat until desired temperature.
  2. Carefully transfer the liquid to a high-powered blender and add the 1 tablespoon coconut oil.
  3. Blend on high for a few seconds to blend in the coconut oil and also to create a light, foamy and creamy consistency!
  4. Slowly pour into a mug, sprinkle with cinnamon and enjoy!
Notes
  1. *Use mace to make this autoimmune protocol friendly.[br][br]Add desired amount of strong brewed coffee in 1 tablespoon additions to make this more traditional and satisfy your caffeine fix
