Pasta Sesame Salad
  • 1 cup brown rice pasta (elbow, penne...etc.)
  • 2 cups cooked white beans
  • 1 cup thinly sliced celery
  • 1 medium chopped carrot
  • 1 medium slivered carrot
  • 3 tbsp coconut oil
  • 2 tbsp toasted sesame oil
  • 3 tbsp seasoned rice vinegar
  • 2 tbsp chopped ginger
  • 1 garlic clove
  • ¼ cup water
  • Toasted sesame seeds
  • Pinch of salt
  • Pinch of pepper
  1. Cook pasta and set aside in bowl to cool.
  2. Blender chopped carrot, coconut oil, sesame oil, rice vinegar, ginger, garlic, water. Blend the mixture until smooth. Set aside.
  3. Toss pasta in dressing, adding in salt and pepper.
  4. Add shredded carrot, celery, and cooked white beans to the salad and sprinkle with toasted sesame seeds.
