2 pounds extra lean ground meat
1 chopped red onion
1 tbsp minced garlic
1 tbsp oregano
1 tbsp basil
Salt & Pepper, to taste
2 tbsp grape seed or coconut oil

Place whole squash on parchment paper, poke with fork a couple times and cook for an hour to an hour and a half at 350 degrees. Let cool for 30 mins after cooking. Cut in half, scoop out seeds, then scrape out the stringy flesh. Place onto plate.
In mixing bowl add ground meat, onion, garlic and spices to bowl. Mix with hands and form into balls. Cover bottom of large skillet with grape seed or coconut oil. Add meatballs to pan. cook on medium heat, turning them until cooked through and browned on each side.
